Archery Summet uses a 100 percent gravity flow winery which allows them to gently handle the wine from vineyard to bottling.
The wines come exclusively from their estate vineyard. The 100 acres are of Jory soil in the Red Hills of Dundee and they train their vineyards closer to the rootstock. There are several estate vineyards with different exposures helping the winery diversify their flavors.
The wine caves are modeled on the subterranean cellars of the Côte d’Or. Naturally insulated with volcanic rock, the temperature in the caves remains between 55 and 59 degrees throughout the year, with humidity below 75 percent. The narrow passageways are lined with 550 premium French oak barrels, and although each barrel holds 60 gallons, the styles differ widely.
